Johnson's Boucaniere's 

Sausage & Tasso Sauce Piquant


1 lb Johnson's pure pork Sausage, sliced
1 lb Johnson's garlic pork sausage, sliced
1/2 lb Johnson's pork or Turkey Tasso 
1 large yellow onions, chopped

2 stalks of celery, chopped 
1/2 green bell pepper chopped
2 cloves of garlic
2 small cans tomato sauce
1 can Rotel 

Cajun seasoning blend

(makes ~8 servings)

 
Brown sausage well, rendering out some of the grease.  Add the trinity & garlic (a little water if needed.)  Sauté till onions are clear. Add Rotel, tomato sauce & 2 cans of water. Season to taste.  Cook on low heat, stirring occasionally untill all meat is tender.  (60-90 minutes...adding water if too thick, and cooking down if too thin!)  


Serve over cooked rice.  Yumm!
